Ingredients (Serves 1)

150g chicken breast fillet
Canola oil or olive oil spray or 2 tsps extra virgin olive oil
1 wholegrain roll
1/2 carrot
Shredded lettuce
2 slices canned beetroot
1 medium tomato
Seasoning, as desired
Thai sweet chilli sauce

 

 

 

 

 


Method
Flatten chicken breast with mallet. Heat oil in a frying pan then cook the chicken. Set aside.
Toast wholegrain roll.
Slice carrot with a vegetable peeler. On half of the roll, place lettuce, beetroot, tomato and chicken. Season, drizzle with Thai sweet chilli sauce and add carrot.
Top with remaining bread roll half to serve.
